As far as post earrings go, I don't mind wearing just one (pretending I only have one second piercing), but what about the dangly type?
Google has proved sadly unresourceful in this area.

Er, not that I have much experience with things of this sort, but you could...
- Wear it (boring)
- Eat it
- Burn it
- Make it the centerpiece of a decoration
- Wear it as something other than an earring
- Put it in a bottle with a message and throw it in the ocean
- Send it into space
- See if you can trade it for a hug from a random stranger
